What would concern me is who is going to watch the fire? If you're talking about smoking a decent sized piece of BB than you've got to expect about 4-6 hours at a very low temp. There will be a lot of fat and juice, so you'll want an elevated grill, or a heavy foil pan. The key is low and slow, which means someone to watch the fire, and make sure the temp and fire stay right. we're usually not at the campsite during the day when we go, so 4-6 hours tending the fire probably wouldn't work for us. If you've got a campsite where this would work, and someone would be there, than I think it's perfect camping food!1 Make sure you've got some good colelsaw and rolls for a BBQ sandwich!!
I've gotten many great grilling tips and rubs/marinades from Steven Raichlen. Google him and you'll find some great ideas!
