I know these are not low fat suggestions, but since it's the holidays we can splurge. Real whipped cream has no carbs, and makes anything special. If you don't go heavy with the sugar, you're ok. I have used pudding mix as a base for a few good last minute things, and the sugar free versions are pretty good too. Try layering like a parfait with some whipped cream and a fruit or toasted nut topping. Also, dark chocolate is not a high in sugar and is one thing my friend w/Diabetes can enjoy.
