My daughter just found out she has gestational diabetes (she had with the first pregnacy too).  She is bummed because she is going to have to be careful over the holidays.  Any good desert recipes I could make for Thanksgiving and Christmas would be greatly appreciated.

Hi Colleen, there's a show on the FIT network called Blaine's Low Carb Kitchen, if you google and find his web page there should be tons of good ideas. It's one of the few shows both hubby and I can watch together.

This is not too bad, sugar from the crust & fruit...
 
  one 8" graham cracker crust one package sugar free instant pudding one can peach halves (drained of syrup)
  place peach halves in graham crust follow direction on pgg for pie for the sugar free pudding pour over peaches and reefrigerat

There are plenty of sites out there with easy to prepare foods for Diabetics.  It's no longer a secret society! I know these are not low fat suggestions, but since it's the holidays we can splurge. Real whipped cream has no carbs, and makes anything special. If you don't go heavy with the sugar, you're ok. I have used pudding mix as a base for a few good last minute things, and the sugar free versions are pretty good too. Try layering like a parfait with some whipped cream and a fruit or toasted nut topping. Also, dark chocolate is not a high in sugar and is one thing my friend w/Diabetes can enjoy.
