Cookies dunked in dark chocolate sounds like a fabulous idea! (I might make those for Thanksgiving!) But for the ones served with the cranberry ice I might consider white chocolate dunking instead. Cranberry is pretty tart and the semisweet chocolate might not provide the balance it needs.
