I made a fritatta on Sunday that was very good. What made it different is that I lined the pan with cooked thin spaghetti. Then poured in the egg mixture (I added some feta cheese and dill to my eggs), some smoked salmon, and topped it with grated Romano cheese. After the eggs were somewhat set, I put it under the broiler to puff up and brown the cheese. Not something you could make the night before though....
