The first thing you need to do is visit this website:
http://www.colonialwilliamsburg.comIt has a wealth of information. If you click on Plan Your Visit you will find a lot of useful information such as ticket types (you can walk anywhere outside without a ticket), but you will need one to enter almost everything else.
Events under that same tab gives a a day-by-day schedule of various activities and which ones are child friendly. The same things do not take place every day.
Even if you buy your tickets on-line or at the resort, you will need to go to the Visitors' Center to get your passes. There is a free shuttle from the Visitors' Center to various point around the perimeter of the historic area. It is usually very crowed, but worth it since you will be doing a lot of walking.
Since you haven't been there for a long time, you will find much more to do and a number of special extra cost ($7-$8) programs + your tickets. You will find much more variety than when you were there las.
If you can possibly attend an evening concert at the Governors Palace you should do so.
You can find the days and times of these for the regular events and the special events in the same place.
Don't miss the docent lead tour of the coffee house at the end of Duke of Gloucester Street. The name is not coming immediately to mind, but I think it is the Carlton Coffee House. It was the newest restoration when we were there, and we thought it was one of the best docent lead tours.
There are 2 Jamestown exhibits. One is Jamestown Settlement where there are re-enactments and a museum. The other is "Historic Jamestowne" which has a Park Ranger lead tour. You can do both easily in a day.
We had a delicious seafood dinner at Christiana Campbell's Tavern. We tried to go to the King's Arm Tavern, but it was closed the night we wanted to go.
There are quite a few restaurants in Market Square. I'm having a hard time remembering where we ate.

Make sure you allow for some down time as Williamsburg during the summer can be hot, very humid and miserable. That said, it is still an amazing place.
As for Busch Garden, we were not impressed, BUT we do not ride roller coasters. <G> Our son on the other had would have had a really good time.
