We also usually book one way fares, the days of buying round trip to save money are mostly over. I would take Kim's advice and do it day of travel and then cancel, you can pick a day into the next three months that is the least expensive when you do that. I don't think I have ever been asked for a return flight proof, not sure how or if they really monitor that since we have also done multiple airlines.
