Brian, all those additions (though not all at once) sound great! I'll have to try them and see. Think I'll go make one now as I have all the ingredients and then I have a couple of nice jalapenos and some red and green peppers. I meant to buy some liquid egg substitute this morning when I was out shopping but forgot that. Since I am cutting the recipe in half I will need 1 1/2 eggs so I'm thinking I'll crack one whip it up and then use half of it. We'll see!
