Very refreshing, great summer dessert, make ahead, and you don't even need an ice cream maker! 1/2 cup lime juice (3 or 4 limes, always use fresh). Save 1 Tbs. zest 3 Tbs. Tequila 4 Tbs. orange liqueur (rec. Cointreau or Triple Sec) 1 1/4 cups powdered sugar 2 cups heavy cream Pour lime juice, tequila and orange liqueur into a bowl and stir the sugar to dissolve. Add the cream and then softly whip until smooth but not stiff. Fold in the lime zest. Spoon into an airtight container to freeze overnight. This ice cream does not need ripening (softening before serving) as it will not freeze too hard and will melt quickly. I serve it in margarita glasses, wet the rim and dip in either sugar or salt.
