This tastes very similar to Indian Pudding.

Blender Sweet Potato Pudding

3 eggs
¾ c. molasses
½ c. milk
½ c. butter, melted
½ tsp. nutmeg
½ tsp. salt
3 ½ c. cut-up raw sweet potatoes

Put all except 2 ½ c. potatoes in blender and blend till smooth. Gradually add remaining potatoes while blending. Pour into buttered baking dish. Add ½ c. raisins or ½ c. chopped nuts. Bake at 325 degrees for 1 ¼ hours. Serve warm with whipped cream or vanilla ice cream.

I had never heard of Indian pudding, but this sounds very good! Very similar to a recipe my mother in law makes, but hers has a lot more sugar in it--almost like a dessert!
