Last night, I was searching Epicurious for something new and different for dinner. I stumbled across this AMAZINGLY easy and delicious recipe for a Mexican soup that is normally made with pork or chicken. The seafood version was surprisingly light yet filing and leftovers were scant, at best. I pretty much followed it as written, only changes were 2 cups clam juice, one cup vegetable stock & slightly less cilantro because my spouse isn't a fan of that spice in abundance.
