These are great for camping cooked over the fire! Or at home on the grill... Has a nice Mediterranean flavor!
[color:"blue"]Garlic & Cummin New Potatos[/color]
12 unpeeled small red potatoes, cut into fourths 2 tablespoons butter or margarine, melted 1 large spanish onion thinly sliced 1/2 teaspoon garlic powder 1/2 teaspoon ground cumin 1/2 teaspoon paprika 1/2 teaspoon seasoned salt 1/2 teaspoon fresh ground black pepper 1/4 cup chopped fresh chopped parsley
Par-boil or nuke potatos til a little underdone... quarter the potatos... I par cook them a day before, and refridgerate, then quarter when cold... then... 1. Heat coals or gas grill for direct heat. Place potatoes in large bowl. Add remaining ingredients except parsley; toss to coat. Place in heavy duty foil packets and seal well 2. grill potatoes over medium heat 15-20 minutes, turning packets every 5 minutes or so... 3. Sprinkle potatoes with chopped parsley; toss to coat.
note: I spray the foil with PAM (or equivalent) before making packets, to avoid sticking...

Nice recipe. Our camping trip of 9 days is coming up next week and potatos are always my friend when camping. Anything I can throw in a foil bag and cook is good as I don't like to use pots and pans other than breakfast cooking when camping. We are going to smoke pork butts while camping this Sunday, can't wait for that.

Funny story about smoking pork... when I got my first smoker, 30 years ago, I brined a pork loin, then marinated it in apple sauce overnight... slathered it in apple sauce to smoke... It turned into HAM! It was really good, but not what I was expecting!
