I made this yesterday and it was fantastic.
Bourbon Apple cake
Ingredients
2 ½ cups flour 2 cups sugar 1 tsp salt 1 tsp soda 1 tsp powder 1 tsp cinnamon ½ tsp nutmeg 1 cup oil 3 eggs 3 cups apples peeled and chopped (I used granny smiths) 1 cup pecans 1 cup raisins 1 12 oz butterscotch chips 1 cup knob creek
Soak nuts, raisins, chopped apples in Knob Creek Bourbon for several hours or overnight. (Place in a storage bag and turn several times so the bourbon will soak into nuts and fruit.)Drain nuts and apples, reserving bourbon. Sift flour, sugar, soda, baking powder and cinnamon into a bowl. Add oil, eggs and bourbon; mix well. Stir in apples and nuts. Pour into a greased 9 x 13-inch pan. Sprinkle butterscotch chips over the top. Bake at 350 degrees for 45-50 minutes or until toothpick inserted in enter comes out clean.
