We had my son's college graduation party over the weekend. I did a taco bar, which turned out great. My son gave me this recipe and asked me to make it. Everyone just raved over it..enjoy.

Tennessee Caviar

1 can black beans
1 can black eyed peas
1 can shoe-peg corn
1/2 red pepper - chopped
2 roma tomatoes - chopped
red onion - chopped
cumin - to taste
cilantro - to taste
salt & pepper - to taste
1/2 bottle of Italian dressing

Mix all together and let sit a couple of hours in the frig. Serve with tortilla chips
