YUMMMMM! These are really good! It comes out really good if you soak the dried cranberries in Grand Marnier for a week or two before use! (we always have a container of them around!) For the apples I always use Rome Apples, slightly tart with a thick skin, which holds up well during baking... Thin skinned apples will collapse during baking...
[color:"blue"]Crockpot Cranberry Baked Apples[/color] 4 large cooking apples 1/3 cup packed brown sugar 1/4 cup sweetened dried cranberries 1/2 cup cranberry-apple drink (I like to substitute Dark Rum or Grand Marnier here <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />) 2 tablespoons butter or margarine, melted 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Chopped nuts (I prefer pecans), if desired
1. Core apples. Leaving a very little core on the bottom. 2. Mix brown sugar, cranberries, cinnamon & nutmeg. 3. Fill centers of apples with brown sugar and cranberries mixture. Place apples in 5- to 6-quart slow cooker. 4. In small bowl, mix cranberry-apple drink and melted butter; pour over apples. 5. Cover; cook on Low heat setting 4 to 6 hours. 6. To serve, spoon apples into dessert dishes. Spoon sauce over apples. Sprinkle with nuts. OPTIONAL: Heavy Cream or Whipped Cream on top of all.

My Grandmother (1897(we think??)-1995) always made Baked Apples... They are one of my favorite desserts! she always served them with heavy cream poured over the top! not whipped, just plain... This variation I found to be particularly good!
