How about the plain ole standby:
  Sausage Dip
  Brown 1 lb. of your favorite local sausage (drain) 1 can rotel - (any type mild - med - or habanero) 2 lb block of velveeta 
  Add all of the above to a crock pot and let it melt. Serve with Scoops
  How can you go wrong sausage, cheese and rotel!

I make one similar to this, but I had a jar of salsa in place of the rotel and a 1/2 cup of sour cream.

I'm not real big on spicy either, I add mild salsa and have hot available if someone wants to make their's hotter.  The sour cream just makes it more creamy.

We do an easy chili Con Queso...
  1lb of ground meat 1lb salsa (hotness aligned with your tastes) 1lb Velveeta Cheese 1 Taco seasoning packet.
  Brown the meat following the instructions on the seasoning packet. I use ground venison, but any ground burger works. Mix meat, salsa, and cubes of cheese in a big microwave safe bowl. Microwave and stir until melted well mixed. Serve with Tortilla chips. I prefer Tostitos Scoops for this.
