All over the tropics everyone seems to have a holiday NOG variation with coconut and the local rum. Try this easy one:
2 egg yolks, whipped til frothy. 1 15oz can coco lopez. 1 14oz can sweetened condensed milk. 1 14oz can evaporated milk. 1 tsp vanilla extract. 1 cup of dark rum. Throw it all in a blender (yolks first to froth) or beat by hand. Add ice if you are going to consume immediately, if not chill then serve over ice and top each glass with fresh ground nutmeg, and sweetened shredded coconut.
