I'm doing an Easter brunch. Any breakfast casserole ideas? I was thinking along the lines of a French toast casserole. I have steak, sausage, and ham slices for the grill, so I was looking for maybe something along the lines of French toast or crepes. . I would like something make ahead and throw in the oven. Also any drink ideas. I'm looking forward to brunch, I've never done it before, so any brunch ideas would be appreciated. Thanks so much. Anon Ellie

If you just google 'french toast casserole', you get a bunch of stuff, including this one by Giada, which looks great, if you like blueberries, a little different. My normal breakfast casserole is Amish breakfast casserole I make mine with sausage or ham instead of bacon and add some green and red peppers.

Thanks Carol. I did make your casserole Christmas morning and it was great. This time around we have a lot going on the grill, steaks, sausage etc, so I was looking for something a little different. I do like the ease of making ahead and just heating it up, so I can enjoy my guests. My husband doesn't mind standing at the grill. Especially after a long winter stuck in the house. I will google some French toast recipes. Thanks

I was just thinking that the one thing that your menu seems to need is some fruit to lighten it up, that's why I thought the blueberry one looked good. Either that or a fruit salad, or maybe some strawberries or other fruit to spoon over top of the french toast. I saw a Paula Deen one <img src="http://www.traveltalkonline.com/forums/images/graemlins/Blush.gif" alt="" /> that had a lot of reviews and was highly rated. It was a make the night before one, so that is always good. I watched a Pioneer Woman episode the other day that was brunch and it was otherwise nothing unusual, but she made some hash brown cups that she cooked in the oven to get toasty, and then cracked eggs in them and cooked them. Those looked cute. Also, Bobby Flay has a regular 'Brunch with Bobby' show. You might look that show up online and get some ideas from that, especially for stuff you could do on the grill.

Thanks again Carol. Some really great ideas. I was going to have some kind of fruit so I will look up Paula Deens fruit salad. I love the pioneer woman. Bobby Flay is good too but my favorite is Ina Garten. I have to stop watching the food network because I'm trying to lose weight. With such garbage on Tv, I miss the food network. Anon Ellie

Sorry, I meant there was a Paula Deen french toast casserole that was highly rated. For fruit salad, I would just do an array of fresh fruits with a sauce with a bit of Grand Marnier and mint. If there are going to be kids, guess you'd need to omit the Grand Marnier! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Smile.gif" alt="" />

Yes, the French toast casserole was Paula Deens. It's a 5 star with excellent reviews (although not a fan of Paula's) it is one I may try one of these days.

Martini & Rossi makes Prosecco splits that might be nice with fresh OJ for Mimosas!
A big frittata is also good.

I made a fritatta on Sunday that was very good. What made it different is that I lined the pan with cooked thin spaghetti. Then poured in the egg mixture (I added some feta cheese and dill to my eggs), some smoked salmon, and topped it with grated Romano cheese. After the eggs were somewhat set, I put it under the broiler to puff up and brown the cheese. Not something you could make the night before though....

Yes, you can make it in advance and reheat it. Or even serve at room temp.
But the casserole idea was the original. Got off track, sorry!
