I found this recipe and it's the best watermelon Salad I've had. I used rice wine vinegar and omitted the Arugula.

I saw a watermelon salad on a brochure from the Palms, it was watermelon and buffalo mozzarella stacked, drizzled with balsamic vinegar, it looked very good, I have had grilled watermelon and goat cheese at Jacala in Anguilla - very good.

Made this salad last night. Very refreshing. I did use arugula and it turned out to be a nice light side. I thought the dressing could of used a little something, but I don't know what. Anon ellie
