That looks very refreshing! I have to say, I would not normally be interested in any recipe by the Neelys, but that does look good!

I saw a watermelon salad on a brochure from the Palms, it was watermelon and buffalo mozzarella stacked, drizzled with balsamic vinegar, it looked very good, I have had grilled watermelon and goat cheese at Jacala in Anguilla - very good.

I have done a grilled watermelon salad myself and it very good. Have to look up the recipe because I can't remember now what was in it! <img src="http://www.traveltalkonline.com/forums/images/graemlins/duh.gif" alt="" />

Made this salad last night. Very refreshing. I did use arugula and it turned out to be a nice light side. I thought the dressing could of used a little something, but I don't know what. Anon ellie
