The trip report on sailing is I think pretty complete. One thing I would highly suggest is you plan to allow time to have part of your vacation be land based. Most of the places we have sailed we board the boat and at the end of the charter hop back on the plane and head home. If you do this in Belize you are really missing out. We only had 3 days on land and we did not plan it out the best but it was still great. We stayed outside of Placencia and did some day trips to ruins and into the rain forest. We went cave tubing. Had a awesome Mayan guide. The kids got to see Mayan villages with woman washing clothes in the river and walking with baskets balanced on their heads. We met really friendly people. We had only a brief glimpse into the mainland, definitely worth a return trip.
We did not have a car but those we met who did found it easy to get around, but gas is expensive.
I have traveled alot of places and I would have to say Belize was one of the most relaxing. Even after getting delayed coming home and having to spend the night in Houston and having a terrible time getting 6 people on a plane the next day I was still relaxed.
I highly recommend Belize, even if you don't sail
