How about a peach salsa for fish/chicken. Grilling a few as suggested is a great idea! This recipe here looks really good. It has rum in it which me likey! Peach salsa recipe -
1½ cups ripe peaches, diced 1 cup tomato, diced 1 tablespoon jalapeño, finely minced ¼ cup yellow pepper, diced small ¼ cup red onion, finely diced 1 tablespoon cilantro, chopped juice of 1 lime 1 tablespoon brown sugar (you can use honey also) salt and pepper to taste
