Looking for a delish...easy quick peach recipe. I have about 10-12 small home grown peaches I want to use for a cookout tomorrow. Can always do a cobbler but was wondering if anything special out there Thanks in advance!

Grill them. Maybe baste with a dark rum and brown sugar mixture, and then serve with vanilla bean ice cream.

How about a peach salsa for fish/chicken. Grilling a few as suggested is a great idea!

This recipe here looks really good. It has rum in it which me likey! I would buy the pound cake instead of making it from scratch - adjust the recipe by half and make a mini-trifle or individual servings.

Peach salsa recipe -

1½ cups ripe peaches, diced
1 cup tomato, diced
1 tablespoon jalapeño, finely minced
¼ cup yellow pepper, diced small
¼ cup red onion, finely diced
1 tablespoon cilantro, chopped
juice of 1 lime
1 tablespoon brown sugar (you can use honey also)
salt and pepper to taste

I bought a peach and mango chutney at the grocery store for a fish dish I made. But I enhanced the chutney by adding fresh mango, red, orange, and yellow peppers, and some sauvignon blanc wine, heating it all in one pot on the stove. Got rave reviews from my steak-loving husband.
