So many to choose from! From where you are staying the following restaurants are all within walking distance: JAX Steakhouse (which is right within your resort), Le Moulin Fou (a french restaurant on the dutch side ... go figure), La Rosa Italian (right across the street), 3 Amigos (Mexican ... I believe they are still open), and the Sunset Beach Bar & Restaurant (which requires a walk down past Maho Beach). But, if you have a rental car there's a number of great choices in the Simpson Bay area and although I have not dined at all of them, they come highly recommended. These include The Palms (as noted in the posts above), Avantika, Topper's, The Greenhouse, Skip Jack's, and even the Buccaneer Beach Bar right on Kim Sha Beach. I'd suggest going to Trip Advisor and searching for the Top 10 restaurants in both the Maho area and the Simpson Bay area. Then, you can read the various reviews that have been posted to see what fits your needs.

Congratulations on your win. If I’m not mistaken, Maho Sonesta is an AI Resort, or at least, it was. If still the case, please don’t let that tie you completely to the resort. In the area I would highly recoded La Moulin Fou and La RosaToo. While not really what I’d call seafood restaurants, all their food is delicious..
In the Simpson Bay area and not too very far away, we have always had good seafood at Skipjacks Restaurant and most specifically, their lobster has always been excellent in our experience. It’s a pretty setting and based on our last few visits, I would recommend a reservation, particularly if you want a water side table. We love to contemplate and dream about all the beautiful yachts moored in the area - where they’ve traveled and what member of the rich and famous population might have traveled on them.

And we have never managed to be positively impressed at Toppers. It was never bad but our experiences there never seemed to match those of so many others who love and rave about the place.
All of which goes to justify the expressions “different strokes for different folks” and “to each his own”.... 😊😊

We love Isola on Billy Folly Road. It is an Italian restaurant, but there are seafood dishes on their menu. We were very impressed with the food and the service!

I would not rule out Mark's Place.
