Sat-Sat might be common, but not always typical.
Only other restaurant I'm aware of on Peter is Oceans 7 which is in Great Harbor. I wouldn't consider that the back side. Certainly an easy spot to stay and head back from the next morning.
Our last night, we've stayed at Norman, Peter, Cooper and Marina Cay. All are easy enough to get back from in time - some you'll just want to leave earlier.

Any day can be a zoo - worst during the busy season. We typically always start on a saturday, but try to go 10 days so we end on a mon/tue or so..
For the first time since our first charter or two, I think we'll be sleeping board the first night - with a 6 month old, we will not be taking a red eye.
