I thought I remembered a recipe for one here that looked better than mine, but did a search and couldn't find it.

So anyone have a great recipe for one?

Louise posted the following recipe:

1/2 cup butter
1 cup sour cream
1 egg
1 16 oz can whole kernel canned corn, drained
1 16 oz can creamed corn, not drained
1 box Jiffy Mix corn muffin mix
1 cup cheddar cheese
Mix together everything except cheese, spoon into buttered 2 quart casserole dish. Bake at 375 for 45 minutes. Remove from oven, add cheese and stir well. Bake another 15 minutes.

I made it that way once, and then made it again, adding the following ingredients:

1/2 green bell pepper
1/2 red bell pepper
1/2 red onion
1 cup mozzarella

I thought the veggies were a good addition, as they made it more colorful and flavorful. I LOVE cheese, so always add more cheese to ANY recipe. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Smile.gif" alt="" />

This is a great receipe for a crowd! I've used it so many times and it's so easy to throw together. In fact, I'm making it for Easter Dinner tomorrow! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Thumbsup.gif" alt="" />

I WILL BE MAKING IT ALSO ON EASTER BUT I COOK A SMALL ONION IN THE BUTTER FIRST THEN ADD TO THE REST TRY IT

I just saw this post. Carol has posted it again. It's a 3-corn casserole and is very hearty and good. I'm not making it for Easter though instead I'm making the old standby bean casserole with French's fried onions and Campbells mushroom soup. Our daughter loved it for Thanksgiving and asked me to make it again. The first time I used fresh green beans but this time I bought frozen. I hope that wasn't a mistake?
