Got this one from YANKEE Magazine... Have not made it myself... but, yepr, I'd add some bourbon too!
[color:"blue"]John Brown's Baked Beans[/color] Yield: 6 to 8 servings
1 pound dry navy beans 1/4 pound salt pork, cut into chunks 1/4 cup brown sugar 1 teaspoon dry mustard 2 teaspoons chopped onion 1/2 cup dark molasses 1-1/2 teaspoons salt Soak beans overnight. Bring to a boil in same water and simmer until tender, 1-1/2 to 2 hours. Drain, reserving liquid. Preheat oven to 275 degrees F. Place beans and salt pork in casserole or bean pot (I use a cast iron Dutch Oven, uncovered). Combine cooking liquid, brown sugar, mustard, onion, molasses, and salt. Pour over beans, cover, and bake 3 to 4 hours.
