A favorite on SXM! we bring it often to impromptu gatherings...
Great for beach sandwiches with L&T or on Triscuts for appetizers...

[color:"blue"]Waldorf Chicken Salad[/color]

Cooked & chilled chicken cut up in small pieces
Mayo
Diced Granny Smith apples (skin removed)
OR, we usually use Grapes, sliced in half
Chopped Walnuts (we sometimes use pecans)
Chopped onions
S&P to taste

Brian--I usually use a red apple in mine, and green grapes. I really like it, Eric not so much. He likes a real traditional chicken salad, with just some onion in it..

I like the tartness of a Granny Smith, or we use seedless red grapes...

I don't know, maybe I should try it with the granny smith. I like the sweetness of a red apple, but maybe Eric would like it if it wasn't so sweet.

I guess it's because I don't normally eat much in the way of dessert, at home anyway, so want the main course to be sweet, maybe?? I don't need dessert anyway...
