About a year or maybe more ago I made a delicious Pork Meatball Soup with Celophane Noodles. Of course I was going to save the recipe which I THINK I got from Cuisine Magazine. Unfortunately I can not find that mag. now and I so want to make that soup again. About the only thing I can remember is that there was ground pork, fish sauce and, I think, rice in the meatballs. I have searched the web and have not found anything that struck my fancy. Any help out there?

lol, is it normal to have hot soup in the middle of summer down in the sunny state? <img src="http://www.traveltalkonline.com/forums/images/graemlins/Wink.gif" alt="" /> well, here's a cucumber soup w/meatballs recipe i have made that's very good and may fulfill your craving; recipe doesn't call for cellophane noodles, but can easily be added- just soak a bundle (i think they usually come in 1.5oz bundles?) in warm water for about 15min, cut into approx 3inch lengths, and simply add probably when u add the cucumber and salt.
cucumber soup w/ meatballs:
meatballs- 1/2lb gr.pork (i use gr.turkey) 1tsp garlic powder 1/2tsp gr black pepper 1/2tsp salt 1 tbsp low sod soy sauce
soup- 1lb kirby cucumbers 1tsp salt 1 stalk scallion, finely sliced 1/2 cup cilantro, finely chopped
for the meatballs mix all its ingredients well using your hands and form into small balls, approx 1tbsp each. for the soup peel and quarter the cucumber lengthwise and cut into 1/4"pcs. in a medium pot, bring 4 cups water to a boil. add meatballs and cook 5min. add cucumber and salt (and the presoaked cellophane noodles if using). bring to a boil. add scallion and cilantro; turn off heat, serve hot. serves 4.
