WHITE CHICKEN MINI-PIZZAS

These tasty mini pizzas are quick and easy for summer lunches, and the kids will love them. Use plain English muffins for these pizzas or small Boboli's. Packaged grilled or roasted chicken pieces make this extra-easy. Good way to use leftover chicken, too!

Ingredients:
6 English muffins, split
1 cup creamy Alfredo sauce, lt. or regular
1 tablespoon fresh chopped basil, or about 1 teaspoon dried leaf basil
4 green onions, thinly sliced
1 small tomato, diced
6 to 8 ounces cooked chicken chunks, cut into small pieces
1 to 1 1/2 cups shredded Mozzarella cheese (I think the fresh boccocini's look and taste great!)

Preparation:
Heat oven to 375°.
Arrange English muffins/Boboli's on a cookie sheet which has been lined with foil that's been sprayed with Pam. Spread sauce over each half, then sprinkle with basil. Top with some of the sliced green onions, diced tomato, and chicken pieces. Mound shredded Mozzarella cheese on each pizza. Bake for 10 minutes, or until hot and cheese is melted.
Makes 12 mini pizzas.

This recipe can be adapted to your variety of choices of course. I've used
canned (drained) artichokes, sliced olives, mushrooms. PS...when my kids were young we'd go to Nana's house for Sunday dinner/Family day. No matter what else was planned Sunday dinner was NEVER to be missed! So, when we'd return on Sunday evening and everyone wanted a 'little something', these were our 'little somethings'. Now, my grandsons do the same! We'd also make them the traditional way w/tomato sauce, but these were my favorite. Enjoy!!
