Someone asked me to post this here,
I have two more recipes I will add to this from my trip.
We also did this sandwich with a chicken we marinated with some cajun spices I brought from home instead of the hams. And used a Port Salut soft cheese instead of the sharp.
But everything else was the same...
Loaf of olive bread from Grand Marche
1 avocado
1/2 cup of mayo
salt and pepper to taste I go heavy on salt..
1/2 t garlic powder
8 slices of fresh sliced old fashion ham
6 slices of Proscuitto
small amount of a dutch sharp cheddar (purchased from express market)
ten sun dried tomatoes in oil
mash avocado, mayo, garlic powder, and salt and pepper. Spread on bread. Place dried tomatoes on spread. Layer meats and cheese and cut into slices four sandwiches... Awesome...
for a easy snack we would have a loaf with Nutella..

BTW... I never had nutella before visiting SXM...
and we now have a jar on hand all the time!
Makes a great peanut butter, nutella & banana sandwich on whole wheat toast! (a little hot sauce makes it even better!)
also great on a plain croissant!
Heart Healthy? I don't think so... It's just a once in a while treat...

Port Salut? One of my all time favorite cheeses!
I love it with a good Virginia Ham, & prosciutto... on a sliced in half baguette...
baby lettuce or baby spinach greens & mayo... very COLD! Yummmm...
Nothing better on the beach at Club 'O for lunch!!!

Well....while everything sounds yummy it's just not going to be the same as it is on SXM. I'll bring the most lame sandwiches to Orient and when I eat them they're the BEST I've ever had!!
