Cleaning out the fridge yesterday and came up with this salad. It was surprizing good
  Bake 10 strips bacon (save cooked fat) Grill 1 Large Chicken Breast Bake 4 quartered red potatoes Saute 1 can quatered artichoke hearts Make 1 cup of croutons using 1/4 of the bacon fat
  in a bowl
  10 calamata olives 2 plum tomatoes 1/2 peeled cucumber 1/2 red onion
  Julienne chicken break up bacon into 1/3 strips
  In a large platter with lots of surface area
  1 head of cut Romaine top with all the above with the croutons ,chicken and bacon last
  Bacon Vinaigrette
  1/2 cup cider vinegar 2T honey Mustard emulsify with bacon drippings. If you need more fat, use olive oil. Add cracked black pepper and pour over salad. Enjoy... We sure did

Ooooo, that does sound good! Well done for a fridge clean out! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Thumbsup.gif" alt="" /> <img src="http://www.traveltalkonline.com/forums/images/graemlins/Thumbsup.gif" alt="" /> <img src="http://www.traveltalkonline.com/forums/images/graemlins/Thumbsup.gif" alt="" /> I normally don't like bacon on much, but usually by itself, like with eggs... or a BLT... BUT, I do like it in a salad! bacon & lettuce taste really good together!
