This tastes very similar to Indian Pudding.

Blender Sweet Potato Pudding

3 eggs
� c. molasses
� c. milk
� c. butter, melted
� tsp. nutmeg
� tsp. salt
3 � c. cut-up raw sweet potatoes

Put all except 2 � c. potatoes in blender and blend till smooth. Gradually add remaining potatoes while blending. Pour into buttered baking dish. Add � c. raisins or � c. chopped nuts. Bake at 325 degrees for 1 � hours. Serve warm with whipped cream or vanilla ice cream.
