I found this recipe on someone's food blog (can't remember who) that was tired of making 2 or 3 different meals every night. It is extremely simple and when you read the ingredients it is quite delicious. I was hesitant to try it but said what the he!!. Start our frying (use little Pam spray) chicken breasts cut in pieces till slightly brown. Next add a 14 oz. jar of salsa (I use Newman's medium)with some heat. To this add one 12 oz. can of diet coke <img src="http://www.traveltalkonline.com/forums/images/graemlins/Yikes.gif" alt="" /> and mix well. Simmer approx. 25 min. until chicken is done. Top with juice of 1 lime. Serve over rice. It really is very good, my family loves it. I have made it with bone in chicken parts, pork chops. and beef cubes. All good. Must use diet coke, regular will be too sweet. Great fast and easy dinner!
