I'm not familiar with electric bikes, but either one would be suitable for a bicycle, there are no steps, ladders or scrambles on the trails. The first is basically a dirt road, and while a portion of the second was actual trail, typically as shown in the photo with a couple narrow spots if the bike can operate in the sand it should be good. There was a bike shop in Odemira, they rated the biking trails as difficult to very difficult and some are over 40 km long. Here's a link (there are a lot that come up) for a company that sets up self guided bike tours https://www.google.com/url?sa=t&source=web&rct=j&url=https://www.cycling-rentals.com/rota-vicentina-bike-tour.html&ved=2ahUKEwjWq-6l79b0AhWMIjQIHbdWBOUQFnoECC0QAQ&usg=AOvVaw2M9hi7TS-hiBXMBvXBwOBO
Drink all day at home, your friends worry about you; do it on vacation and they say "what a good time you're having". Save your friends needless worry, travel more!
