GrahamJ has been quite informative but just a little update.
The Carib Beach Bar is currently closed and under new ownership, they have been bought over by the popular Tapas Restaurant owners and they are promising a new and improved "Carib Lounge". Though there is a possibility that the refurbishment maybe completed by your visit (not started yet) you could supplement this with Crystal Waters Beach Bar...a stones throw away. Crystal Waters is a VERY laid back beach bar with live music and great barbacue on Sundays (1:00 pm onward)

I know your schedule is hetic for the limited time here, but PLEASE take a trip over to the East Coast (Bathsheba), you can get a bus from Bridgetown (1 hour in each direction / US $1.00 per person each way).
Even if you do not stay there, just take the round trip (buses usually stay at the turn-around point for about 10-15 minutes to collect locals) and most of all take your camera...you will be blown away by the beauty of our east coast.
