Making Cornish Game hens tonite...
Stuffed with peppers, onions, mushrooms and sausage (no bread)... (leftover from a quiche deb made yesterday)...
Then basted in Orange Juice Concentrate, non-diluted...
Yummmm!
350F til done and basted every 20 minutes with the OJ concentrate...
serving with mashed winter squash, mashed carrots and mashed turnips, all mxied together...
and fresh brussel sprouts...

Here is a recipe I have used many times with great results.

Honey & Brandy Cornish Hens

½ cup Butter
2 T Honey
2 T Brandy
1 T Worcestershire
2 T Lemon juice
2 Cornish Hens - split

Mix first 5 ingredients together over low heat. Baste Hens with mixture while baking in a 375 oven. Depending on the size of the hens 30 min should so it. Cook and reduce remaining sauce and drizzle over hens to serve.

Carol, I should think that he meant to say to put all ingredients, with the exception of the hens, in a small pan on the stove over low heat and heat until the butter is melted. And then baste the hens with that. That sounds logical to me.

By the way, the sauce works very well for basting chicken breasts on the grill.
