this is a recipe i make often and made again today for our office potluck. it's always a hit. if anyone's interested, here's a pic of my dish and also a link to the recipe.

Wow- we make caprese a lot but never thought to roast the tomatoes. That looks good!

the roasted tomatoes make the recipe. and this recipe turned out to be a winner for the office potluck, not only for taste but for presentation. it didn't dawn on me while preparing it, but someone pointed out that the colors are representative of christmas.
