Airlines make schedule changes all the time, yes, especially when you THINK you get things all set up a long time in advance, and then they cancel or make a schedule change. The good news I guess you know is that if they cancel or reschedule such that you can't make the flight, you can cancel with no penalty at all and get all your money back. Because of that, they are more likely to be flexible and give you more options, but of course cancelling altogether only is a good option if the price hasn't gone way up on your other options. You shouldn't have any problems dealing with JB - when they make the changes they're usually very good about helping to satisfy the customer, regardless of what that means. Just beware that if you DO decide to cancel the JB flight altogether, it could possibly take 30 to 45 days for the money to be credited back to your credit card. It will happen but sometimes it's immediate and sometimes not quite so fast. We waited for JB to issue a credit once and it took almost two full billing cycles but we did finally get it. Another time it was less than a week so go figure.
Just a thought - and if you can get a much better price on Delta I'd probably jump on it, but would it be of any interest to fly into JFK the day before and spend the night there? And yes, the hotels are not inexpensive but the JB seats are so roomy and all that - Delta not so much from what I've heard and experienced - but typical of most carriers.

Free ETOH correct. We flew Delta Comfort back from Grand Cayman a couple of weeks ago and it was a fantastic flight. High end entertainment system, charging outlets in the seats, plenty of room and, yes, free Blue Moon...
Went out and got a Delta CC for the free bags and priority boarding...now a valid alternative to JB
