This is from www.about.com. Some good recipes. I thought it sounded great. Capital Grille has a coffee grind rub on one of their steaks. Hubby loves it and says you can't taste the coffee. So, when I saw this one I thought I'd pass it along..... <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />


This marinade adds flavor and tenderizes. Don't worry, though you won't get more than a little of the coffee flavor. This marinade works well on all meats.

Ingredients:

•1 cup strong coffee
•3/4 cup brown sugar
•1/2 cup cider vinegar
•1/4 cup chopped onion
•1 tablespoon olive oil
•1 teaspoon dry mustard
•1 teaspoon ground black pepper

Preparation:
Combine all ingredients in ziplock bag. Store in fridge until ready to grill. Great on all meats.

OK, I feel stupid, Contessa, but for the coffee, do you use brewed coffee, or the ground beans? The recipe sounds really good.

Coffee and/or Coke based marinades are the tops!
Coke and coffee marinades (combined) are excellent... the Coke breaks down the fibers &Y connective tissue, and makes the meat really tender...

Brewed. And you could use instant, too. Just make sure it's strong.

I have to agree! There's a small place near me that's run by a great hubby/wife team. They make a coffee pork that is amazing. Served w/plantains, and really good beans and rice. More Cuban influenced that the SXM type of Carib cooking that i was so used to. It's another great side of Carib cooking that I'd never really had much of, but love now.
