I made this quiche this morning, with some modifications. Here is my version:

Ham and Cheese Quiche

9 inch deep dish pie crust, baked
1 cup diced, cooked ham
1/2 onion, diced
1/2 red pepper, diced
3/4 cup mozzarella cheese, shredded
3/4 cup cheddar cheese, shredded
3 eggs, beaten
1/2 cup mayonaise
1/2 cup milk
salt and pepper
dusting of grated parmesan

Saute onion and pepper until soft, in a small amount of oil. Mix together milk, mayo, ham and seasonings. Add the cheeses and the onions and peppers, and stir in the eggs. Pour into baked pie crust, dust top with grated parmesan and bake at 350 for 45 to 50 minutes. Let stand 10 minutes before serving.

This quiche wasn't as rich as some using cream, so that was nice, but it was good. I didn't have any jack cheese on hand, which is what the original recipe called for. Next time, I think I would use the jack.

Deb makes one very similar to this, but adds a bunch of onions & mushrooms...

I'm not that crazy about mushrooms, so didn't add them, even though original recipe called for them.. I like onions, but discovered I only like a small amount in a quiche..

I don't understand the mayo. Is it a noticable taste?

I use white cheddar and gruyere.
