I found this recipe on someone's food blog (can't remember who) that was tired of making 2 or 3 different meals every night. It is extremely simple and when you read the ingredients it is quite delicious. I was hesitant to try it but said what the he!!.
Start our frying (use little Pam spray) chicken breasts cut in pieces till slightly brown. Next add a 14 oz. jar of salsa (I use Newman's medium)with some heat.
To this add one 12 oz. can of diet coke <img src="http://www.traveltalkonline.com/forums/images/graemlins/Yikes.gif" alt="" /> and mix well. Simmer approx. 25 min. until chicken is done. Top with juice of 1 lime. Serve over rice.
It really is very good, my family loves it. I have made it with bone in chicken parts, pork chops. and beef cubes. All good. Must use diet coke, regular will be too sweet. Great fast and easy dinner!

Sounds great !! I will give it a try. I agree that any lean meat would be good. I might even try it with shrimp.
We are low carbers, so I will try it over mashed cauliflower (a mashed potato substitute), instead of the rice.

On low carb myself. Gotta say, cauliflower is a poor substitute, but does ok for mashed potatoes..

We boil the flowerettes in chicken broth for 15 minutes, then drain well. Mash them with a potato masher, then add butter and a little milk. The grandkids don't even know the difference.
