Here is a recipe that I have made many times, although it is not actually a Key Lime (Cool Lime Pie) everyone really loves it. You see a picture of it here: http://www.tasteofhome.com/Recipes/Cool-Lime-PieIngredients 1 package (8 ounces) cream cheese, softened 1 can (14 ounces) sweetened condensed milk 6 ounces limeade concentrate 4 drops green food coloring, optional 1 carton (8 ounces) frozen whipped topping, thawed, divided 1 graham cracker crust (9 inches) 1 kiwifruit, peeled and sliced Mandarin oranges and chopped pistachios, optional Directions In a large bowl, beat cream cheese and milk until smooth. Beat in limeade and food coloring if desired. Fold in half of the whipped topping. Pour into crust. Cover and refrigerate for 2 hours. Garnish with kiwi, remaining whipped topping, oranges and pistachios if desired. Yield: 6-8 servings.

wow anon, that IS different! not sure if I'd like it, but I'm willing to give it a try one day... when I first heard of jalapeno sauce on a PB&J sandwich, I thought YUCK... BUT I love them now!

I've been using this one for years: 9" baked graham cracker crust For filling- 1/2 envelope gelatin 2 Tbl cold water 2 eggs, separated 1/2 C sugar pinch or salt juice of 1 lime and grated peel of 1/2 lime 1/2 C heavy cream, whipped until it holds a soft shape -Make pie shell and cool. In a small saucepan, sprinkle gelatin over cold water and let stand 5 minutes or until spongy. Meanwhile, beat egg yolks with half the sugar, the salt, lime juice, and peel, until light and creamy. Pour into the top of a double boiler and cook, stirring, over gentle heat until mixture is the consistency of heavy cream. Take from heat. Dissolve gelatin over a pan of hot water and stir into lime mixture. Cool, stirring occasionally. Beat egg whites until they hold a stiff peak and beat in remaining sugar, a spoonful at a time until smooth and glossy. When lime mixture starts to set, beat until smooth and fold into meringue, with whipped cream. Pour into pie shell and chill.

Gotta have fresh key limes, or it's not worth it. A family favorite for years.
PIER HOUSE KEY LIME PIE • 4 eggs, separated • 1 (14-ounce) can sweetened condensed milk • ½ cup Key lime juice • ½ teaspoon cream of tartar • 1 9-inch graham cracker crust, frozen • 4 tablespoons sugar
Pie: Heat oven to 325 degrees. Beat the egg yolks on high speed until thick and light in color. Turn off the mixer and add the sweetened condensed milk. Mix on low speed. While mixer is still on low, add half the lime juice, then the cream of tartar, then the remaining lime juice. Mix until blended. Pour filling into frozen crust. Bake 10 to 15 minutes, until filling is set and center is firm and dry to the touch. Cool pie to room temperature. Place in freezer for at least 3 hours before topping with meringue. Meringue: Heat oven to 500 degrees. Heat egg whites in a double boiler with the 4 tablespoons of sugar, stirring often, until they reach 110 degrees (a bit more than lukewarm to the touch, if you don't have a thermometer). Remove from heat and beat on high speed until fairly stiff peaks form. Spread on frozen pie, forming peaks with your spoon. Place in oven about 5 minutes, watching carefully, until meringue peaks are golden. Return pie to freezer. . Makes 8 servings.
