I know nothing new for so long...ok here is a dip recipe that is super easy to make and is always a big hit. It is served hot but even if you don't keep it warm it is still good on crackers.

Baked Onion Souffle Dip

3 8oz. packages Cream Cheese
2 C. grated parmesan cheese
1 bag of frozen chopped onions
1/2 C. real mayonnaise

Mix all together and pour into a greased pie plate. Bake at 350 degrees until hot and bubbly and starting to brown on top about 30-45 minutes. Serve with club style crackers. Enjoy!

I grilled some baby artichokes the other day.
That with a grilled veal chop and orzo greek salad. Fun meal.

Easiest PULLED PORK ever- I couldn't believe it but this 3 ingredient recipe rivals any more complex version I've ever made or eaten: <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />
1 2 lb pork loin roast or tenderloin
1 12 oz can root beer
1 bottle of your favorite barbeque sauce
Put roast in crock pot -pour root beer over the roast and let it cook for 6-7 hours on low. Take out roast, drain off liquid and shred the pork.
Put it back in the crock pot and add the barbeque sauce (I used only 3/4 of the bottle). Heat , put in potato rolls (add cole slaw if you want) and then just enjoy. <img src="http://www.traveltalkonline.com/forums/images/graemlins/dine.gif" alt="" />

Almond Joy Pie
This is wonderful but super rich!!!

Pie Filling Ingredients:
4 tbsp butter, melted
1 egg, beaten
1 tbsp all purpose flour
½ cup granulated sugar
1 ½ cups shredded sweetened coconut
¾ cup whole milk
1 tsp vanilla bean paste (extract will work)

Crust & Topping:
1 (6 oz) Chocolate Oreo Pie Crust
Ghiradelli Milk Chocolate Chips, melted
½ cup whole roasted almonds

Whisk the pie ingredients together: melted butter, egg, flour, sugar, coconut, vanilla paste and milk together.
Spread ¼ cup almonds on the bottom of the pie crust, cover with ½ of the melted milk chocolate.
Place in the freezer for 5 minutes to set up. After the chocolate sets up a little bit, pour in the pie filling.
Bake at 350 degrees for 40-45 minutes or until set. The top will be golden brown. Allow to cool.
Scatter remaining ¼ cup almonds on the top of the cooled pie; pour melted chocolate over the almonds. Put in fridge for the chocolate to set up. Enjoy!
Sometimes you feel like a nut, sometimes you don’t? No problem so to make a Mounds Pie, just leave out the almonds and use dark chocolate instead.
Best served at room temperature! If you'd like to eat it chilled, combine 3 tbsp of room temperature heavy whipping cream to the melted chocolate mixture before filling and topping the pie.

EGG & ONION CASSEROLE SIDE DISH
(When I first heard about the recipe and wasn't enthused about it, then I tried it. Trust me, it's great!!!)

2 large size onions, thinly sliced
2 Tbsp. margarine or butter
6 hard cooked eggs sliced
3/4 cup Mayo
1/4 cup milk
3 Tbsp. grated Parmesan cheese
1 tsp. prepared mustard
1/2 tsp. salt
1/8 tsp. cayenne pepper (I don't use this ingredient just 'cause I don't usually have it on hand)

In a large skillet sauté onions in margarine. Layer onion and egg in 11 1/2 X 7 1/2 X 1 1/2 inch baking dish. Stir together last 6 ingredients; spread over top. Broil 3 minutes or until brown and bubbly. Serves 6.
