Versatile and easy to make:

1 pkg yellow saffron rice
1 can cream of mushroom soup (or substitute w/cheese soup)
1 can Rotel diced tomatoes & green chiles (or brand similar)
1 small onion diced
1 cup diced peppers (yellow, green, red, etc.)
1 cup shredded yellow cheese
1 pkg cooked shrimp (tail off, deveined)

Cook rice per directions on package. Saute peppers and onions about 5-minutes. Place all ingreditents in a greased casserole dish (13 x 9 or similar) and thoroughly mix. Use a handful of shredded cheese on top to garnish. Bake @ 350 degrees for about 35 - 45 minutes depending on oven and altitude. Serves 8-10 people.

You can add sliced sausage, spicy ground sausage or ground beef, prawns, or scallops depending on what you prefer. For a vegetarian dish, leave out any meats/fish.
