Our flight is scheduled to arrive STT at 1130 on a Saturday morning and we are heading to STJ to spend the night.
Do you all think it is best to catch the 1:00 ferry from CA or from Red Hook?

I would say you have time to make the Red Hook ferry, less ferry fare but taxi fare can be stiff w/luggage. CA ferry longer on water time, bad if any potentially seasick guests...but IMHO a prettier ride. You still will need a taxi so not much savings there.
