I was casting about looking a different way to do sweet potatoes this year. I combined several different recipes into this one which proved to be a big hit.
  [color:"blue"]Coconut Ginger Lime Sweet Potatoes[/color] Ingredients •	2 tablespoons all-purpose flour  •	10 cup thinly sliced (1/4 to ½ inch slices) peeled sweet potato (about 3 pounds – 3 big ones)  •	1/4 cup butter  •	1/2 cup packed light brown sugar •	1 can coconut milk  •	lime zest from 2 limes •	fresh lime juice of 2 limes •	orange zest of 1 orange  •	3 tablespoon grated peeled fresh ginger  •	2 teaspoon low-sodium soy sauce  •	1 teaspoon salt  •	1/4 teaspoon black pepper  •	½ cup flaked coconut •	Cooking spray  Preparation 1.	Preheat oven to 425°. 2.	Combine flour and potato in a large bowl; toss well. 3.	Melt butter in a small saucepan over low heat. Add sugar and next 8 ingredients (sugar through pepper); warm until sugar dissolves. Pour over potato mixture; toss well. Spoon mixture into a shallow 2-quart casserole dish coated with cooking spray. 4.	Cover and bake at 425° for 55 minutes or until tender. Sprinkle with flaked coconut for last 15 minutes and cook uncovered till coconut is browned. Let stand 10 minutes.

OH Yummmm... I wonder if this would be good with some sliced apples thrown in???  I have to have apples with my sweet potatoes...
