Wondering if we should give our skipper a daily per diem meal allowance or just include him in provisioning and dinners out. Any thoughts…?

Yes, either or. Make it clear from the start. Also depends if you are cooking onboard or not.

Navigare recommended $75-$100/day for meals if you want them on per diem. That is the route we have chosen as we plan to eat ashore as much as possible.
