Connie--hey, thanks for posting that! Haven't made that recipe for a while. Maybe this weekend! <img src="http://www.traveltalkonline.com/forums/images/graemlins/thinks.gif" alt="" />

This one is a keeper! Thanks! <img src="http://www.traveltalkonline.com/forums/images/graemlins/dine.gif" alt="" /> It'll be really good on the sailboat after a day of racing! chilled all day in the cooler...
Do you think it would be good with a brown & wild rice mixture? or just white rice? we usually replace the rasins with red or black currants in recipes... Just our own personal preferance...
Do you use sweetened or unsweetened coconut?

Eric doesn't like coconut at all, so I personally don't put it on. Can't remember how they did it on the boat. A couple of times, I left the raisins out, as Eric's not fond of those either. I always made it with regular white rice.

Yeah, Deb's not fond of rasins also, that's why we usually substitute currants... but we both love coconut!
Try currants, Eric may like them... they are a lot smaller than rasins... and a different, but still sweet, flavor... more concentrated too...

PASTE mixture, not pasta. You mix all the spices up into a PASTE..

This recipe would probably be good with dried cranberries too, as anternative for the raisin challenged... <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" />

One time we put mandarin oranges in it. It makes a nice color contrast also.
