When in Sicily I noticed that potatoes were par-boiled prior to roasting. I'm sure this made it easier to prepare but they were outstanding!! The other night I made these for a dinner party (got little Yukon's @ Trader Joe's) w/olive oil, fresh rosemary and shallots. OMG! For some reason they were just awesome.
