Honey Carrots

1 TBSP oil
2 pounds carrots, cut into one inch pieces
1 cup chicken broth
1/2 cup honey
2 TBSP red-wine vinegar
salt/pepper
2 TBSP butter

Heat oil in skillet over medium high heat. Add carrots until brown... add broth, honey, vinegar, salt and pepper. Bring to a boil... reduce to a simmer, cover, and cook 10 minutes.
Uncover and cook over medium high heat til carrots are tender and liquid is syrupy and reducing. Remove skillet from heat... add butter.
